Datto has sake that increases in taste by aging it for one year or two
or three years.
Usagi no nukumori 2022 (pasteurized), scheduled to be shipped in November,
is a pure rice sake that has been aged for two years.
This is an pasteurized sake with an alcohol content of 17.5%. It has been
aged to a smooth finish. We recommend drinking it at room temperature or
warm.
After tasting "Koto no neiro 2024", we decided to let it age
for a year as it is still young (it is currently stored in bottles in the
brewery's refrigerator). If you see ``Koto no nero2023'' (a little in stock
at the brewery) or ``Usagi no nukumori2021'' (out of stock at the brewery)
at a dealer, please purchase them and try the aged taste.If the storage
conditions are poor, the sake will deteriorate.
If the pasteurization is not done properly, the bacteria that cause hiochi
bacteria will grow, causing the sake to turn cloudy and have a sour taste
and peculiar aroma.
To allow it to mature deliciously, we recommend storing it in the refrigerator.Datto
is not intended for ultra-long term storage. Storage in the warehouse is up to 3 years.Then we ship.
